Wortelmuffins with roomkaasversiersel – (make: 12)

  • 430 g koekmeel
  • 165 G Soft Bruinsuiker
  • 5 ML BAKING POWDER
  • 2,5 ml koeksoda
  • 2,5 ml salt
  • 5 Ml Fine Cinnamon
    250 ml oil
  • 250 ml yogurt
  • 125 ml Pynappelstukke, fine cropping
  • 2 eggs
  • 7,5 ml vanieljegeursel
  • 500 ml gerasperde root
  • 160 ml (100 g) Rosyne

Versiersel

  • 125 g roomkaas
  • 30 g butter, at room temperature
  • 10 ml fyngerasperde suurlemoenskil
  • 5 ML SUURLEMOENSAP
  • 5 ML VANIELJEGEURSEL
  • 400 ml Versiersuiker, gesif

1 Voorverhit the oven to 180°C and smeer a muffinpan with 12 holtes either inject it with kleefvrye kossproei.
2 Sieve the koekmeel in a large mengbak and add the bruinsuiker, baking powder, koeksoda, salt and cinnamon. Mix the oil, yogurt, pineapple, eggs and vanieljegeursel in another mengbak.
3 make a holte in the dry bestanddele and add the pynappelmengsel.
4 fold the root and rosyne and create the seized in the voorbereide muffinholtes. Bak for 20 minutes or until auburn and uitgerys.
5 make the versiersel: beat the roomkaas, butter, suurlemoenskil, suurlemoensap and vanieljegeursel to romerig. Add the gesifte versiersuiker and beat until just mixed. Tasting and add more suurlemoensap, if preferred.

6 to sit before: decorate the afgekoelde muffins with the citrus-Roomkaasversiersel, sprinkel with gekapte neute. And sit before.
