Quick and easy cake using my vanilla cupcake recipe

There is nothing worse than getting a call to say someone is popping around in an hour and realizing you have nothing in the cupboard to offer them. My go to is to whip up a quick cake using my vanilla cupcake recipe. It’s always popular and serves nicely.


200 g butter, softened

1 3/4 Cups caster sugar (370g)

2 tsp vanilla bean paste

4 eggs

2 3/4 Cups self – raising flour (405g)

1 Cup milk (250ml)

6 Cups icing sugar mixture (900g)

1/2 Cup milk (125ml)

Preheat oven to 180°C. 

Cream the butter, sugar and vanilla bean paste with an electric mixer. Add the eggs, one at a time, and beat until just combined.

Add the flour and milk in alternate batches and stir with a wooden spoon until just mixed.

Pour into a greased and lined square cake tin. Bake for 20-30 minutes or until cooked through and top is golden.

Remove from oven and transfer to a wire rack to cool completely.

For the frosting, use an electric mixer to beat the butter until very pale. Gradually add the icing sugar while beating.

Add the milk and beat until well combined.

Top with chocolate shavings, or topping of your choice.
